Quality
imposed by the AOC:
Before actually starting to produce AOC Espelette chilli, each producer has to receive a certificate from the INAO for their plantation.
To receive the label the produce (fresh, string and powder) is controlled by a jury of tasters composed of producers, processors and food experts:
- With samples of the fresh fruits and strings
- With systematic controls for the powder.
Spot checks are made by agents from the INAO:
- The conformity of the production specifications (management of plantations, processing warehouses)
- The accounts recorded correctly.
Internal quality control
To satisfy the demand of it's clients, GP PAYS-BASQUE has set up an internal quality control system:
- For the processing and packaging:
- A processing warehouse
- The HACCP method since February 2006
- Systematic controls of the conformity of the goods for each delivery (for the string: general state and freshness of the fruits, for the powder: analysis in a registered laboratory).
- For deliveries:
- A delivery platform allowing the delivery of large quantities (access for articulated lorries)
- The computerised traceability complimentary to the accounting of goods
- The
Web Edi to facilitate the exchange of information with our partners.
